Petra's flours are used by many of the pizzerias that are considered the best and finest. You often find the flours in pizzerias where you chase high edges with a lot of swoosh. The flours are a little more expensive, but that is often the case with flours adapted for pizzas with a lot of swoosh. Precisely 0102HP is a flour with a high w number and is intended for pizzas with a lot of swoosh. We have tried it sporadically but cannot give a full statement yet. You can simply test.
