As the name suggests, this is the same variety as classic rice, but the real difference only becomes apparent during processing. Rice is grown in the traditional way and all stages of processing take place directly on the Colombara premises. In particular, this product goes through the so-called paddy rice maturation, a technique that makes Carnaroli Acquerello rice unique. The difference between classic Carnaroli rice and Acquerello Carnaroli rice lies in the nutritional profile, thanks to the re-incorporation of the rice germ, and during processing the Acquerello variety acquires similar nutritional properties to brown rice. At the same time, it retains the gastronomic properties of classic rice. Simply put, this type of product is richer in amino acids, vitamins and minerals.
