Smoother ceremonial matcha with some light notes of edamame and baby spinach. This matcha is made from the Okumidori cultivar, a premium tea cultivar prized for its smooth and creamy flavor. This is quite similar to our matcha washimine but with a little bit more astringency. You may notice a slight tingling on the tongue with this tea but for the most part it is smooth and sweet. With the tall pine trees growing nearby, the tea plants are given partial shading throughout the day, leading to an even smoother and sweeter taste. About the Farm This Okumidori matcha comes to us from a small farm in Wazuka, slightly south of Kyoto. The area around Kyoto has always been famous for its matcha production, ever since the early 1200s. Still today, Uji, Ujitawara and Wazuka produce much of Japan's best matcha, and there are many talented matcha farmers with unique styles of cultivation. How to Brew it Add 2 grams of matcha to a bowl and then pour in 100-150ml of 160-175F water.
